Amped up Oatmeal Cookies
Do you have a go-to cookie when you're craving something a little sweet, something a little chocolaty and something a little chewy? These cookies are just what you're looking for. This is the recipe on the lid of Quaker Oats but I added a few more things to make them even better (yes, it is possible). Make these for your kids when they get home from school, or take a plate to your co-workers. You'll be their favorite person. Enjoy!
Vanishing Oatmeal Cookies
*adapted from Quaker Oats
2 sticks butter
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups Quaker oats (quick or old fashioned, uncooked)
2 cups shredded coconut
1 1/2 cups chopped pecans (optional)
1 bag (12 oz) milk chocolate chips
Directions:
Heat oven to 350 degrees.
Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats, coconut, walnuts and chocolate chips; mix well.
Drop by rounded tablespooonfuls onto ungreased cookie sheet. Bake 10to 12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. (about 4 dozen cookies)
