Salted Nut Rolls

This post is dedicated to my mom.  When I was younger and it was just "mom and me" time, It was pretty easy to convince my mom to buy me a candy bar.  I usually chose a Reese's or 3 Musketeers or sometimes a Marathon bar...do you remember those?  Anytime my mom chose a candy bar it would be a Salted Nut Roll.  No lie.  Chocolate didn't tempt her like it did me.  She likes nuts...the more the better.  On a rare occasion she would grab an Idaho Spud or a Rocky Road but that's a story for another day.  I made homemade Salted Nut Rolls today and they were pretty tasty!  Am I turning into my mom?  Or perhaps I should try them dipped in chocolate.
Start by mixing a yellow cake mix with egg and softened butter.
 
Press in the bottom of a greased 9X13 pan.  Cook for 10-12 minutes...
then remove from the oven and add 3-4 cups of mini marshmallows.
Sprinkle them on top to make a single layer.
Place in the oven for an additional 3 minutes until the marshmallows are puffy like this.  Let cool.
Meanwhile, mix 1 pkg peanut butter chips, corn syrup and butter in microwave safe bowl.
Until just melted.
 
Add nuts and vanilla.  Stir well. 

Spread over marshmallow mixture and let cool.
When cool you can cut into the delicious gems.  Be careful.  They are addicting.
They are salty and sweet, crunchy and chewy...  I can see why my mom loves them. 

Salted Nut Roll

1 yellow cake mix
1/3 cup softened butter
1 egg
3-4 cups mini marshmallows

Combine the cake mix, butter and egg together and press into 9X13 pan.  Bake at 350 for 10-12 mins.  Top with marshmallows.  Bake another 3 minutes.  Remove from oven and cool.

Peanut mixture
1 pkg. peanut butter chips
2/3 cup corn syrup
1/4 cup butter
2 tsp. vanilla
2 cups salted peanuts

Microwave chips, corn syrup and butter until melted.  Add vanilla and peanuts.  Mix well and pour over marshmallows.  Cool and cut.
