Pasta Salad Primavera
Monday, March 28, 2011
Over the weekend two of my sisters and one of my sisters-in-law came to visit. I always look forward to their visit because it is guaranteed that I'll laugh...a lot. While they were here we made some delicious food. This salad was one of my favorites. So easy to make and delicious too.
Throw the cut broccoli in with the noodles during the last three minutes of boiling.
Cut the artichoke hearts, tomatoes and mozerella cheese.
Use one cup (or more) of this dressing.
Stir together and serve immediately. Store leftovers (if any) in refrigerator.
Pasta Salad Primavera
8 ounces Rotini or Ziti pasta
2 cups broccoli florets
1 pint cherry or grape tomatoes, halved
1 cup frozen peas
1 (14-ounce) can artichoke hearts, drained and chopped
1 4 1/2 ounce) can sliced black olives, drained
8 ounces Mozzarella cheese, diced
1/2 cup fresh grated Parmesan cheese
1 Tbs chopped fresh basil
1 cup (or more) Bernstein's Cheese Garlic salad dressing
salt and pepper to taste
Cook pasta according to package directions, adding broccoli to the boiling water for the final two minutes. Drain and rinse with cool water. In a large bowl, combine all ingredients, toss with dressing and season with salt and pepper. Enjoy!
