Sour Cream Noodle Bake

Sometimes I get tired of making the same 'ol thing for dinner. I don't like to experiment with meals very much because my kids are picky and after putting a lot of time and energy into a dish, I actually want my kids to eat it. When I came across this recipe I thought it was a no-brainer. My kids love noodles (they have a deep love for boxed macaroni and cheese). They love cheese. This recipe was so easy to make and delicioso. I changed a few things on the original recipe to make it a little healthier. I used ground turkey instead of ground chuck. I also used light sour cream and low-fat cottage cheese. I used medium cheddar cheese because I was all out of sharp cheese. This is a great dish to make and keep in the fridge. You can pop it in the oven 25-30 minutes before your dinner guests arrive. Also a great dish to take to your sick neighbor or a new mom who hasn't had a hot meal since she came home from the hospital. The best thing about this meal is that your kids will love it.
Sour Cream Noodle Bake
*adapted from Pioneer Woman
1-¼ pound ground turkey
1 can 15-ounces Tomato Sauce
½ teaspoons Salt
Freshly Ground Black Pepper
8 ounces, weight Egg Noodles
½ cups light sour cream
1-¼ cup Small Curd Cottage Cheese
½ cups Sliced Green Onions (I used about 1/4 cup or less)
1 cup Grated Cheddar Cheese
Preheat oven to 350 degrees. Brown ground turkey in a large skillet. Drain fat, then add tomato sauce. 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, then simmer while you prepare the other ingredients.
Cook egg noodles until al dente. Drain and set aside.
In a medium bowl, combine sour cream and cottage cheese. Add plenty of freshly ground black pepper. Add to noodles and stir. Add green onions and stir.
To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, then sprinkle on half the grated cheddar. Repeat with noodles, meat, then a final layer of cheese. Bake for 20 minutes, or until all cheese is melted.
Serve with crusty French bread.
