Happy Pi Day!

 
Today, in honor of Pi (3.14 for all you non-math lovers) I thought I would celebrate Pi day by sharing my husband's favorite pie recipe.   I always get compliments when I make this pastry.  Don't let the deliciousness of Pecan Pie fool you.  Making it is easy as pi (I kill myself) and delicious too.  So, as you're working on all those hard math problems...or your taxes, take time out and enjoy some pie.



Pecan Pie
*Betty Crocker's Cookbook

Frozen pie pastry, thawed
2/3 cup sugar
1/3 cup butter, melted
1 cup corn syrup
1/2 tsp salt
3 eggs
1 cup pecan halves or broken pieces

Heat oven to 375 degrees.  Beat sugar, butter, corn syrup, salt and eggs with hand beater in medium bowl.  Stir in pecans.  Pour into pastry-lined pie plate.  Bake 40 to 50 minutes or until set (not jiggly in the middle).  Enjoy!
