Edible Bird's Nests


Easter is one of my favorite times of the year.  I love it because everything is in bloom outside and the flowers start popping up everywhere.  My beloved Lilac bush produces the most beautiful purple blossoms that are so fragrant.  Cross your fingers that my Hydrangea survived the winter.  I also love birds...not birds at the beach birds... but I love spring birds.  Finches, Sparrows and Robins.  So, as my first Easter treat I made edible Bird's nests.  I came across this years ago and make it every year with my kids.  They would be darling as place card holders for Easter brunch.


You need: All Bran cereal, sweetened flake coconut, milk chocolate chips and egg-shaped candy.

Place about 1 cup of coconut on an un-greased cookie sheet.  Place it in an oven set to broil.  
Watch carefully as it gets toasty brown.  Remove coconut from oven and let cool.

Pour milk chocolate chips in microwave safe bowl.  Heat at 30 second increments, stirring each time until chocolate is melted.  This took me 4, 30 second increments.

Stir in 2-3 cups All Bran cereal.  Not too runny and not too firm but still shape-able.

Place a large spoonful of chocolate "twigs" into a lightly greased muffin tin and shape with spoon to make a "nest".

Let nests set until firm.  Assemble the nest by layering with coconut and candy eggs.  So easy and yummy.  Happy Easter!
