Yogi Trail Mix Bars

It's warm enough to go hiking, walking, running, and/or biking. On those outings you need a little nutritious pick-me-up. Look at these babies. Yogi Trail Mix Bars...nutritious and delicious.
Put oats, bran, coconut, sunflower seeds and dried fruit in a bowl...DO NOT put chocolate chips in the bowl at this point...they will melt (trust me).
Mix well.
Honey, vanilla, salt, sugar and peanut butter go in a 2 quart pan. Boil and then simmer 4 minutes.
I know...I'm eating healthy. You don't have to use the natural stuff...Jif and Skippy work well too.
Pour hot mixture on dried mixture and stir well. Press in 9 inch pan. Then sprinkle chocolate chips and more (unsweetened) shredded coconut on top.
Place in refrigerator for an hour. Cut into bars. Prepare to be energized.
Makes about 16 bars 1 cup honey 2 tsp vanilla extract 1/4th tsp salt 2 T granulated sugar 1/4 cup peanut butter 1 1/2 cups rolled oats 1/2 cup oat bran 1/2 cup dark chocolate chips 1/2 cup unsweetened shredded coconut 1/2 cup sunflower seeds 3/4 cup dried cherries, cranberries or berry blend (I used craisins 'cuz that's all I had) Combine the honey, vanilla, salt, sugar and peanut butter in a medium sized saucepan and bring to a boil. Reduce heat to simmer and cook for about four minutes, stirring occasionally. In a large bowl, combine all other ingredients except for chocolate chips. Pour the boiling honey mixture over the oat mixture and toss well. Press mixture into a greased nine inch pan and pat down with wet hands. Sprinkle with chocolate chips and more unsweetened coconut. Chill in fridge for an hour, or until firm, before cutting into bars. |
