Momma's Bran Muffins

 
I'm in the mood for something healthy.  My parents are visiting so I've been making lots of goodies.  I made cookies, strawberry cake and my dad's favorite dessert...chocolate cake. I'll be posting the recipe this week.  It turned out delicious but now my body is telling me to get back on track so I made these.  Momma's Bran Muffins.  They did not disappoint.  Easy to make and delicious; two birds one stone. That's how I roll.

  
Measure All Bran into a bowl.
 
 Add milk.
 Let set until soft and mushy.
 Add dry ingredients.
Pour into prepared pan.
Let bake for about 12 minutes.  Serve warm with butter and honey or jam.  So Good!

Momma's Bran Muffins
*Adapted from Jenny Cottle

2 cups All Bran prepared cereal
1 1/4 cups milk
Mix together and let sit until soft.  In a separate bowl add;
1 1/4 cups whole wheat flour
1/2 cup sugar
1 Tbs. baking powder
1/4 tsp salt
1 egg, beaten 
1/4 cup oil
1/4 cup applesauce

Add egg, oil and applesauce to the All Bran and milk mixture.  Mix dry ingredients together and add to wet ingredients.  Scoop spoonfuls into greased muffin tins.  Cook at 400 degrees for 10-15 minutes until toothpick comes out clean.  Serve warm.
