Slow Cooker Sweet and Sour Pork

I need an easy dinner, a recipe I can just throw in the crock pot so it will be ready at dinner time. I need something that uses ingredients I already have. I need Slow Cooker Sweet and Sour Pork.
The aroma of deliciousness in my house is amazing...and it's so easy to make.
Peel and cube 3 cups potatoes and chop one onion. Mix and place at the bottom of your Crock Pot. Then place your pork roast (mine was frozen) on the potatoes and spread with garlic.
Mix water, red wine vinegar, brown sugar, soy sauce and Dijon mustard.
add salt and pepper.
Mix well.
Pour over pork roast.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
So tender and delicious. Serve with a roll and prepared salad...wa-la. Ps. your kids will love it too.
Slow Cooker Sweet and Sour Pork
3 cups cubed peeled potatoes (Idaho or Ykon gold)
1 cup chopped onion
3 pound pork roast, fat removed
4 cloves garlic, minced
1 cup water
1/2 cup ketchup
3 Tbs. red wine vinegar
2 Tbs light brown sugar
2 Tbs. soy sauce
1 tsp. Dijon mustard
1/2 tsp black pepper
salt
Directions:
Arrange potatoes and onion in bottom of slow cooker. Place pork roast on top of potatoes and onion. Spread garlic all over pork. In a medium bowl, whisk together water, ketchup, viengar, sugar, soy sauce, mustard, black pepper and salt. Pour mixture over pork.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Slice pork crosswise into thin slices and serve with the potatoes, onions and sauce.
