Carmelitas

Let me introduce you to my new friend Carmelita. 

To make Carmelita, you need to unwrap 32 squares of delicious caramel, and combine  with cream.  Melt on low heat while you make this...
 
Brown sugar, flour, oats and baking soda.  (pretend you don't see the chocolate chips)
 
 Put half of the oatmeal mixture into the bottom of the pan.  Cook for 10 minutes.
 Remove from oven and sprinkle chocolate chips over the crust.  In my excitement, I added the chocolate chips to the dough.  Oops.  Then pour the caramel over the chocolate chips.  Crumble oatmeal mixture over caramel and bake again.
 
Let bars cool (if you can) and cut into squares.  So delish.  If you want to make a 13x9 version like I did, simply double the amounts.

Carmelitas

32 caramel squares, unwrapped
1/2 cup heavy cream
3/4 cup butter, melted
3/4 cup brown sugar, packed
1 cup flour
1 cup rolled oats
1 tsp baking soda
6 ounces semi-sweet chocolate chips

Combine caramels and cream in a small saucepan over low heat.  Stir until completely smooth; set aside.  In a separate bowl, combine melted butter, brown sugar, flour, oats, and baking soda.  Pat half of the oatmeal mixture into the bottom of an 8x8 pan.  Bake at 350 degrees for 10 minutes.  Remove pan from oven and sprinkle chocolate chips over crust.  Pour caramel mixture over chocolate chips.  Crumble remaining oatmeal mixture over caramel.  Return to oven and bake an additional 15-20 minutes, until the edges are lightly browned.  Remove from over and cool completely before cutting.  

Serve and store at room temperature.
