Highlighter Chicken

This dish is one of my kid's favorites...the bonus is that it is so easy to make. It's called Chicken Diable but my kids think that when it's cooked, it is the same color as a yellow highlighter. We call it Highlighter Chicken.
It only takes 5 ingredients. Chicken, honey, salt, mustard and Curry Powder.
I use frozen chicken too. Don't be afraid to double the recipe...it makes great leftovers.
Cook for about an hour. Mmmm the aroma in the air is amazing.
Highlighter Chicken
4 chicken breasts (fat removed)
4 Tbs butter
1/2 cup honey
1/4 cup prepared mustard
1 tsp salt
1 tsp curry powder
Preheat oven to 350 degrees. Melt butter in pan. Stir in honey, mustard, salt and curry powder. Coat chicken pieces and arrange in single layer in a 9X13 inch pan. Bake until tender (45 minutes to an hour). Baste a few times if possible.

wow, this was so good for being so simple! extra yummy served with jasmine rice.
