Cowboy Chow

Raise your hand if you have picky kids.  Keep your hand up if you have no idea what to prepare for dinner tonight.   I don't know about you but my hand is up. Tonight I'm making Cowboy Chow.  My kids love it.  It's easy to make and delicious.  I tell my kids this may be what cowboys ate out on the range a long, long time ago (they don't realize Pace Salsa and Sweet Baby Ray's Barbeque sauce didn't exist back then).  It makes a good story and perhaps it will convince your pickiest child to take a bite.  From that first bite he will be in love with Cowboy Chow. 
You'll need chicken (I just take mine straight out of the freezer), salsa, barbeque sauce, pork and beans, corn, and black beans.  You'll also need Fritos, cheese, sour cream, tomatoes, olives, green onions etc.

One cup Salsa (any brand, any heat) and one cup of barbeque sauce of your choice.
Place your chicken, the barbeque sauce/salsa combo, pork and beans, black beans and corn in Crock Pot.
Place Crock Pot on low all day.  Let the chicken cook and your house absorb the delicious smell of your up-coming dinner.
Remove chicken from Crock Pot and cut/shred into bite-sized pieces.  Place back in Crock Pot.
Stir the mixture together.  Doesn't it look delish?
Assemble your Chow by layering Fritos (or rice), Cowboy Chow, cheese, olives, sour cream, green onions etc.  Prepare to enjoy.  Oh, and it makes a lot so you'll have enough for leftovers tomorrow!  Bonus.

Cowboy Chow

8-10 chicken tenders (or 4-5 chicken breasts)
1 cup barbeque sauce
1 cup salsa
1 can drained corn
1 can black beans, drained and rinsed
1 can pork and beans

Put all ingredients in Crock Pot on low.  Cook all day.  Stir and cut up chicken after it has cooked.  Serve over brown rice if you want to be really healthy, or serve over Freetos.  Sprinkle with cheese, sour cream, olives, tomatoes, green onions etc.  Enjoy!
