Oatmeal Raisinet Cookies

Oatmeal cookies. Mmmmm.  It's been a little chilly and wet around here (again).  I needed a little comfort food to get me through the day.  I thought I'd make some oatmeal cookies and, to add a little twist, I added Raisinets.

I like to make a double batch and flash freeze some for later *wink*.

Oatmeal Raisinet Cookies

2 sticks butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 1/2 tsp vanilla
1 cup whole wheat flour
1/2 cup all purpose flour (or omit whole wheat flour and add 1 1/2 cups all purpose flour)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups quick oats
2 boxes (theater-sized) Raisinets

Heat oven to 350.  Beat together butter and sugars until creamy.  add eggs, vanilla and beat well.  Combine flour, baking soda, cinnamon and salt; add to egg mixture and mix well.  Stir in the oats and the Raisinets.  Mix well.

Drop by rounded tablespoonfuls onto greased cookie sheets.  Bake 11 minutes until golden.  Cool about 1 minute and then move to wire rack.  Enjoy!

 Ready for a little taste.

Don't mind if I do...  Delicious.
