Mexican Wedding Cookies

My husband loves these cookies. Every time he samples one, he begs me to get the recipe. They are known by a lot of different names...Mexican wedding cookies, Mexican wedding cakes, Butter Balls, Russian Tea Cakes etc. The end result is the same...buttery, crunchy and sweet. Very easy to make AND you can serve them at your Cinco de May par-tay. Let's begin.

Blend the softened butter with powdered sugar and vanilla. Add flour and mix well.
Add chopped nuts.
Shape into balls and cook for 15 minutes
When cookies are still hot, roll in powdered sugar.
Place on cooling rack until cool.
Mexican Wedding Cookies
1 cup butter, softened
3 Tbs powdered sugar
1 tsp vanilla
2 cups flour
1 cup nuts, chopped (pecans)
Powdered sugar
Cream butter and 3 Tbs powdered sugar. Add vanilla. Add flour and mix well. Add nuts. Shape into small balls and place on ungreased cookie sheet. Bake at 350 degrees for 15 minutes. While still hot, roll in powdered sugar.
