Cinnamon Swirl Cake

I love cinnamon.  Especially mixed with sugar and goo.  My daughter and I came across this recipe. I first tasted this cake years ago and loved it so much, I asked for the recipe.  However, I've never made it before.  How did this deliciousness get past me?  Well, we decided to try it.  Oh my stinking heck this Cinnamon Swirl Cake was so good.  Perfect to eat on a lazy weekend morning with nothing more to do than read the newspaper (a girl can dream). It's easy to make too.

 Cinnamon Swirl Cake

3 cups flour
1 cup sugar
4 tsp. baking powder
1/4 tsp. salt
2 eggs
2 tsp. vanilla
1 1/2 cups milk
2 sticks butter
2/3 cups brown sugar
1 Tbsp. flour
1 Tbsp. cinnamon

Mix flour, sugar, baking powder and salt.  Add eggs, vanilla, milk and 1 stick melted butter.  Pour into greased 9x13 inch pan.  Melt second stick of butter and stir in brown sugar, cinnamon and flour.  Pour on top of cake and swirl through.  Bake at 375 for 25 minutes.  Glaze with thin powdered sugar/milk icing while hot.  Enjoy!

    I wish I could smell the aroma!  This looks so good.  Do you think it would still be good if I made it with wheat flour, agave, and olive oil?  :)  J/K
